The Essential welcomes Chef Chaz Lindsay of Pulito Osteria, Jackson, Mississippi's love letter to Italian cooking, for a one-night-only collaboration. Lindsay cut his teeth in New York icons like Craft, Colicchio and Sons, and Eleven Madison Park before cooking just outside Rome — where, he says, he learned about seasonality and letting ingredients speak for themselves — then came home to open one of Mississippi's most celebrated restaurants. That ingredient-first philosophy is right at home in The Essential's kitchen, and the collaborative menu will lean into what both do best: simple, seasonal, quietly precise cooking with plenty of soul.
