Together, they blend Julio’s dedication to heirloom masa and artisan tortillas with Salud’s heartfelt recipes and vibrant beverage program, creating a rich, communal dining experience that honors the spirit of Mexican taquerias in downtown Birmingham.

Julio Hernandez, a native of Tlaxcala, Mexico, is a celebrated chef recognized as a StarChefs 2020 Rising Star, James Beard 2022 Emerging Chef, and 2024 Best Chef Southeast finalist. After moving to New York City as a teen and transitioning from front-of-house to the kitchen, Hernandez honed his skills at renowned restaurants before relocating to Nashville. There, he embraced French technique at Hillwood Country Club and later led Nectar Urban Cantina, elevating Nashville’s taqueria scene. Inspired by his heritage and a deep connection to masa, Hernandez launched Maiz De La Vida, dedicated to heirloom, molino-ground masa.
