For one night only, La Fête will welcome culinary talents Wil Drake and Jacob Schwartz for Fumée, a celebration of “smoke” as the inspiration for the menu. This event is part of La Fête’s “De Cuisine” dinner series.
The monthly series shines a spotlight on an often-overlooked role in the kitchen: the Chef de Cuisine. Each month, Kristen and her CDC Diego Taillon welcome a guest CDC for a collaborative, one-night-only dinner inspired by a single French word, selected by Kristen, to shape the evening’s theme and menu.
More about the guests: HERO Chef and Founder, Wil Drake studied nutrition at Birmingham’s Samford University and has worked as a pastry chef and cake decorator, hustled in a busy bbq restaurant, flipped burgers, worked in an acclaimed London restaurant, hosted pop-up dinners and spent time in Ireland studying the art of whole animal butchery. He started Hero Doughnuts as a pop-up shop selling his brioche style doughnuts at farmers markets and record stores before partnering with Pihakis Restaurant Group in 2017. The brand has grown from doughnuts to full breakfast plates, lunch specialties, coffee, shakes and other treats served at 8 locations in 3 states.
With nearly a decade of experience making sushi and over 15 years dedicated to smoking meats for events of all kinds, Jacob Schwartz spent much of his life immersed in the craft of food. Along the way, he has honed skills in butchery and meat curing, always driven by curiosity and a love for the process. While he works professionally as a Senior Art Director, every bit of his free time is spent smoking, collaborating, or simply thinking about food.
