Son of a Butcher is excited to be hosting another Parmigiano Reggiano Cracking in partnership with Southbound Food Festival! They’ll be opening a wheel of Vacche Rossa Parmigiano Reggiano from Emilia Romagna, Italy!
Join them Thursday, September 25th at 5:30pm to view the art of cracking open a wheel of Parmigiano Reggiano. This free event is open to the public and will include samples with plenty available for purchase.
Vacche Rossa is one of the most sought after breeds for Reggiano and for good reason. This majestic animal produces great, rich milk that takes age very well. The Catellani Family make just five wheels a day from their small herd of cows just outside the town of Parma. The result is a fruitier, nuttier Parmigiano that is very much a table cheese worthy of careful thought, but can certainly elevate a risotto or pasta dish to the next level.
